Which cooking techniques should every home cook know?

What is the difference between braising and stewing?

What internal temperature should different meats reach?
The USDA publishes safe minimum internal temperatures for all types of meat and poultry. These are not suggestions. A reliable instant-read thermometer is the single most important kitchen tool for food safety.

How do you know when oil is hot enough for cooking?
Drop a small piece of bread or a grain of rice into the oil. If it sizzles immediately and rises to the surface, the oil is ready for sauteing. For deep frying (350-375F), use a clip-on thermometer. Visual cues like shimmering or light smoke from the oil surface are less reliable than a thermometer but workable for everyday cooking.
What makes a good sear on meat?
Three factors: dry surface, hot pan, and patience. Pat the meat dry with paper towels. Heat the pan until a drop of water evaporates on contact. Place the meat and do not move it for 2 to 3 minutes. The Maillard reaction, the chemical process that creates the brown crust and deep flavor, requires temperatures above 280F and direct contact between the protein and the pan surface.
